DI-PROX® M 189

DI-PROX® M 189 mix has been developed for the following types of cheese manufacturing: soft white cheeses, acidified creams, fresh products where a high viscosity is needed.

Products Details

DEFINITION: Blend of mesophilic cultures in freeze-dried form for direct vat inoculation. Mix of the following strains: Lactococcus lactis subsp cremoris and Lactococcus lactis subsp lactis var diacetylactis.

  • Manufacturing: 1 to 5 UA* /100L of milk
  • Fresh cheeses: 1 to 2 UA* / 100 L of milk (at 20-28°C)
  • Acidified creams: 7 to 8 UA* / 100 L of milk (15h, 16°C, pH 5.3 to 5.5)
  • A long fermentation, with low temperatures (20°C) helps to obtain a thick texture.

STORAGE: Conservation in its original packaging: 24 months at –18°C  /  12 months at +4°C

LABELLING: Lactic cultures
ALLERGENS: According to Regulation (EU) No 1169/2011: Presence of milk or milk derivatives.

HEAVY METALS:  Mercury : < 0>

Used for direct inoculation in milk: 
- Inoculate when the bottom of the vat is just covered with milk.
- Vigorous agitation promotes dissolution.

COUNTRY OF ORIGIN: This product and its strain are manufactured in France by BIOPROX.

  • Halal and Kosher certified. Certificates available upon request.
  • Suitable for vegetarian and gluten-free diets.
  • Not suitable for a vegan diet.

GMO STATUS: This product is not, does not contain or does not originate from GMOs as defined in Regulation 1829/2003/EC. This product is therefore not subject to any labeling obligation within the meaning of Regulation 1830/2003 / EC.
IONIZATION STATUS: This product and the ingredients used to manufacture it are not ionized.
