YO-PROX® 700

APPLICATION YO-PROX® 700 has been developed for direct vat inoculation for yoghurt application. This culture gives an unctuous yoghurt with short texture and mild flavour. It is suitable for stirred yoghurt Thus, when YO-PROX® 700 is added during the manufacture of dairy products, it could be observed a limited growth of contaminants in finish products and gives a very low post-acidification.

DEFINITION

Blend of thermophilic cultures in freeze-dried form for direct vat inoculation. Mix of the following strains: Streptococcus thermophilus and Lactobacillus bulgaricus.

AMOUNT TO USE

Manufacturing: 5 UA*/100 L of milk

METHOD OF USE

Used for direct inoculation in milk:

- Inoculate when the bottom of the vat is just covered with milk.

- Vigorous agitation promotes dissolution.

STORAGE

Conservation in its original packaging: 24 months at –18°C

12 months at +4°C
